  • 1 can albacore tuna, drained and flaked
  • ¼ purple onion, finely diced
  • ½ cup roasted red peppers, finely diced
  • 6 cups baby spinach


Cook tortellini according to package directions until tender. Strain and toss hot tortellini into a large bowl. Add remaining ingredients. Stir to coat. Serve hot or cold. Enjoy!
