Spring Pasta Recipe


  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 3 zucchini, sliced
  • 1 1/2 lbs. plum tomatoes
  • Zest and juice of 1 lemon
  • 2 tablespoons white balsamic vinegar
  • 1/4 cup pesto
  • Parmesan cheese
  • 1 lb pasta, cooked
  • 1/4 cup fresh basil, chopped

Place garlic and olive oil in a sauce pan over medium high heat. Cook for 1 minute and add zucchini and tomatoes. Cook for 10 minutes, or until the tomatoes are starting to burst and the zucchini is browned in places. Add lemon juice, zest and white balsamic vinegar.  Let cook for 2-3 minutes. Stir in pasta and pesto, stir until combined and well coated. Serve with Parmesan and basil.
