Mini Pineapple Upside Down Cakes

Summer is in full swing and outdoor barbecues and parties seem like a weekly activity! I’m usually on dessert duty, so I’m always looking for easy and creative ways to make a yummy treat.

My latest creations were these Mini Pineapple Upside-Down Cakes. The pineapple and cherries add a tropical summer touch and save me the time of frosting and decorating. With a box of cake mix, you can spend less time in the kitchen and more time enjoying the sunshine!  Try ’em out for your next weekend party and let us know how it goes!

Mini Pineapple Upside-Down Cakes


  • 1/4 cup melted butter

  • 1/3 cup brown sugar

  • 1 can pineapple rings

  • 1 jar of maraschino cherries

  • 1 yellow box cake mix (and ingredients required: eggs, oil, water)

Stir in some savings with Oscar Mayer coupons.


1. Mix melted butter with brown sugar and coat muffin tin generously.

2. Remove a small section of a pineapple ring and insert slice to fit snuggly in muffin tin.

3. Repeat for the rest of the tin and insert a maraschino cherry in the center of each ring.

4. Prepare cake mix according to box directions and pour into muffin tin.

5. Bake at 350° for 30-35 minutes.

6. Flip over on a rack to cool and enjoy!
