  • 1 large eggplant, sliced
  • 1/4 cup olive oil
  • 9 thin slices mozzarella
  • 1 1/2 cups grape tomatoes, halved
  • 1 cup fresh basil, loosely packed
  • 5 cloves garlic, finely chopped
  • Nonstick baking spray
  • Salt and pepper


  1. Preheat oven to 400 degrees. Place eggplant slices on a large baking sheet sprayed with nonstick baking spray. Drizzle with olive oil. Sprinkle generously with salt and pepper.
  2. Place mozzarella slices, tomatoes, and basil leaves on top of each eggplant slice. Sprinkle with garlic.
