These No-Bake S’Mores Peanut Butter Bars are the Best After School Snack

It’s 3 p.m. and the kids are due home from school any second. They’ll come barging through the door, begging for something to eat. And this fun little treat is a perfect way to let them enjoy something sweet, no baking required.

To make, simply microwave honey until boiling, stir in peanut butters, graham crackers, and oats. Press into a pan and enjoy as-is. Or top with marshmallows and drizzle with chocolate.

Allergy-free alternatives: If you’re looking for a way to make this treat allergen-free, use sunflower butter and gluten-free crushed pretzels instead. You can also add in a scoop of plant-based protein powder for an added protein boost.

No-Bake S’Mores Peanut Butter Bars Recipe

Chocolate Peanut Butter Bars | thegoodstuff

  • 3/4 cup honey
  • 1 cup peanut butter
  • 2 1/4 cups crushed graham crackers
  • 2/3 cup quick oats
  • 12 large marshmallows, sliced in half
  • 1/2 cup milk chocolate chips
  • 1/2 cup semi-sweet chocolate chips
  • 2 Tablespoons coconut oil

1. Place honey in a large microwave-safe bowl. Microwave for 90 seconds, or until boiling. Remove from microwave and stir in peanut butter, graham crackers, and oats. Press into a parchment-lined 9×9- or 8×11-inch pan.

2. Place marshmallows sliced-side down on top of the peanut butter layer.

3. Place milk chocolate chips and 1 Tablespoon coconut oil in one small microwave-safe bowl, place dark chocolate chips in a second microwave-safe bowl, with 1 Tablespoon coconut oil.  Microwave in 30-second bursts, stirring between, until chocolate is melted and smooth.

4. Drizzle milk chocolate, then dark chocolate on top of the bars.

5. Refrigerate until chocolate is set and bars are cool. Slice into squares with a sharp knife. Serve and enjoy!
