These yummy Mummy Pop Tarts will get your family into the Halloween spirit in a pinch. Let your kids help you spread on the apple butter filling and “wrap up” these googly-eyed mummies. Cooking together is a great opportunity to make new memories!

Pop tarts were my favorite childhood treat, but this homemade version is even better. The crunchy pie crust and jam filling tastes amazing when it comes straight out of the oven. I’ve filled mine with apple butter, but you can fill yours with a sweet or even savory filling of your choice. (I’ve even provided some recommendations below the recipe!)

What makes this homemade pastry recipe so easy is that it starts with refrigerated pie crust. I like to keep my freezer stocked with a box of premade pie dough so I can create sweet and savory treats just like this. It’s especially helpful during the holiday season!

1. Preheat the oven to 400 degrees and line a baking sheet with parchment paper.

2. Unroll the refrigerated dough and trim it into a rectangle. Repeat with the second roll.

3. Cut 4 rectangles from each piece of rolled out dough and place on baking sheet. Re-roll remaining dough into a rectangle and cut into strips.

4. Spoon the apple butter onto the middle of each rectangle, then spread, leaving a 1/4-inch edge around the rectangle. Place a strip of dough on the top and bottom of each rectangle.

5. Take remaining dough strips and criss-cross them across the rectangles to look like mummy wrappings.

6. Press the ends of the strips down to attach them to the edge of the rectangle, then use a knife or pastry cutter to trim the edges.

7. Whisk the egg in a bowl with a teaspoon of water. Brush the top and edges of the pop tarts with the egg wash.

8. Bake for 20-25 minutes or until the edges are brown. Let cool slightly, then add candy eyes. Serve warm or cold.

The flavor options are endless but here are a few of my faves:

• Nutella
• Pumpkin butter
• Raspberry jam + chocolate chips

• Pizza sauce sprinkled with Parmesan cheese — use mozzarella cheese & olives for eyes
• Cheddar cheese & ham
• Sweet jalapeño jelly & goat cheese
