So, I’ve set out to find some alternatives for when you’re down to your last cookie. Don’t worry, these six copycat Girl Scout cookie recipes and store-bought versions I’ve found are downright delicious and will get you through until the Girl Scouts come knocking on your door next year. • 1 (17.5-ounce) packet Betty Crocker Sugar Cookie Mix
• 1/2 cup + 4 Tablespoons butter, melted (divided)
• 1 cup peanut butter
• 1/2 cup powdered sugar
• 6 ounces chocolate chips

1. Heat oven to 350 degrees Fahrenheit. Mix together cookie mix and 1/2 cup melted butter. Press into a 9×9-inch pan. Bake for 15-17 minutes.

2. In a stand mixer, whip peanut butter and powdered sugar together until fluffy. Spread gently atop hot shortbread crust. Cool in fridge or freezer until cookie base is no longer warm.

3. In a microwave-safe container, melt together butter and chocolate chips, stirring until smooth. Spread atop peanut butter layer. Return to fridge and cool until set. Slice to serve.
