Butternut Squash Tortellini

This Butternut Squash Tortellini recipe is my go-to when I’m craving some light pasta and short on time. Adding a few extra ingredients to premade frozen food is definitely a quick and easy way to prepare a meal and still add a homemade touch. With butternut squash and pre-made tortellini, it’s a great fall recipe for a dinner at home or even a pot luck! Give it a try and let us know what you think!

Brown Butter Sage Butternut Squash Tortellini


  • 1 butternut squash, peeled, seeded, and chopped into bite-sized pieces

  • 3-4 tbs olive oil

  • 4 cups chopped broccoli

  • 4 cloves minced garlic

  • 3 cups cheddar cheese


1. On a baking sheet, spread out your chopped Butternut squash and drizzle with Olive Oil. Add salt and pepper to taste.

2. Bake at 375 F for 20-30 minutes or until squash is tender.

3. Boil package of tortellini according to package directions and drain.

4. In a saucepan, brown butter and add safe. Cook until edges are crispy.

5. In a bowl, add tortellini, then butternut squash and smother in brown butter sauce.

6. Sprinkle some parmesan cheese and serve with a crispy loaf of bread!
