I love a good Thanksgiving feast. I feel all warm and cozy inside sitting down to dinner with friends and family, enjoying a home-cooked meal lovingly prepared by one (or all) of us.
The meal really brings home the idea that we all have much to be thankful for, at least for me. Platters are overflowing with delicious sides, someone’s busy carving the turkey, and don’t even get me started on dessert. Good company and good food all come together for a day where I’m constantly reminded of how lucky I am.
Of course, the next day can be another matter, especially if you’re the productive home cook who’s now stuck with all those leftovers. Just what are you to do with all that stuffing, turkey, and cranberry sauce?
Put it in a muffin.
And not just any muffin! These Thanksgiving Stuffing Muffins are great for packing in lunch boxes, eating on the go, or boxing up for friends and family to take with them when they head for home the next day.
Making these Thanksgiving muffins is super easy, too. Just grab your leftovers, some biscuit dough, and a muffin pan — and you need less than 20 minutes to bake them to perfection!
