This spicy maple glazed carrots recipe from my site that I’m sharing with The Good Stuff proves that you don’t have to sacrifice flavor when being mindful about what you eat! The sweet and spicy flavors pair so well with the earthy roasted carrots. You can adjust the cayenne pepper to your own tastes, making this a versatile dish for your whole family. It’s the perfect heart-healthy dish for February.
- 1 pound carrots
- 1 tablespoon olive oil
- 1 tablespoon real maple syrup
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
Preheat oven to 400 degrees. Wash and peel the carrots. Then slice the carrots into equal sized sticks. Place carrots in a bowl and add the remaining ingredients of olive oil, maple syrup, salt and cayenne pepper. Toss well to coat the carrots evenly. Spread on a baking sheet and cook for 20 minutes. Serve hot and enjoy.
