This Slow Cooker Chicken Taco Soup is the Perfect Winter Meal

The month of January typically means two things in my family:

1. We’re battling some pretty bad cases of the sniffles.

2. We’re tired of shivering and being cold all the time.

Instead of jacking up the heat and regretting it maybe a little when the utility bill comes due, I like to turn to a piping hot bowl of hearty soup to ease my winter sorrows.

Curling up on the couch with a fresh bowl of this zesty Slow Cooker Chicken Taco Soup has got to be one of the best highlights of every dreary and cold winter day. Personally, I like to load mine up with sour cream and cheese, but you could even add crushed tortilla chips to give this Crock Pot taco soup a sassy crunch.

This easy taco soup recipe doesn’t need to be babied and watched over, either. I just toss the ingredients in my slow cooker, wait for three hours, and get ready to enjoy all the flavors of juicy shredded chicken, three kinds of beans, and flavorful tomatoes. That’s right, that means there’s more time for my latest Netflix obsession (Travelers) or, heaven forbid, to tackle a messy spot in the house.
