Bring quinoa, coconut milk, water and salt to a boil in a medium saucepan. Reduce to simmer and cook 15 – 20 minutes or until the liquid in absorbed.

Ingredients
1 cup quinoa
1 cup light coconut milk
1 cup water
1/2 teaspoon salt

1 cup grilled pineapple
Juice of 1 lime
1 teaspoon grated ginger
1/2 jalapeno, chopped
1/2 red onion, chopped
1 tablespoon brown sugar
1/4 teaspoon cayenne pepper

24 Mini bell peppers, cut in half and seeded
1 tablespoon toasted macadamia nuts, chopped

Instructions

  • Bring quinoa, coconut milk, water and salt to a boil in a medium saucepan. Reduce to simmer and cook 15 – 20 minutes or until the liquid in absorbed.
  • Mix together salsa ingredients.
  • Heat oven to 400 degrees. Fill the red peppers with quinoa. Bake for 15 to 20 minutes. Top with salsa and macadamia nuts.
