Use your cutting machine to cut out the letters for Shake It Off or buy sparkly cardboard letters at your favorite craft store. You can wrap denim fabric over a 8 1/2 x 11 piece of cardboard. Then just glue the letters onto the denim.

Artichoke Truffles

Artichoke Truffles

These artichoke truffles are cool, rich and decadent bites filled with goat cheese parmesan cheese and garlic. Make ahead and let chill overnight.

Serving –  24 truffles

Ingredients:

  • 3/4 cup Parmesan
  • 2 tablespoon chopped parsley
  • 2 clove garlic, finely minced
  • 3 ounces cream cheese, room temperature
  • 3 ounces goat cheese, room temperature
  • 2 teaspoons grated lemon zest
  • 1/8 teaspoon pepper
  • Salt
  • 2 6/12 ounce jars marinated artichoke hearts, strained quartered

Artichoke Truffles steps

Directions:

Mix the Parmesan, parsley and garlic together in a small bowl. Combine the cream cheese, goat cheese, lemon zest, salt and pepper in a medium bowl. Add the artichokes and mix to coat each heart liberally. Transfer to the bowl of Parmesan and roll to cover completely. Place on a parchment or wax paper lined baking sheet.  Refrigerate until firm, about 1 hour.  Let sit at room temperature for 30 minutes before serving.

Skewered Thai Chicken

Skewered Thai Chicken

Skewer the chicken and place it in marinade the day before. Cook right before you serve and serve with your favorite peanut satay sauce.

Ingredients:

  • 4 boneless, skinless chicken breasts, sliced in strips
  • 2 cloves garlic, halved
  • 1 inch piece of ginger, finely minced
  • 1 teaspoon thai red curry paste
  • Juice of 1 lime
  • 1 cup coconut milk
  • Peanut satay sauce
  • 2 teaspoons cilantro, optional

Directions:

Place a skewer through each slice of chicken and put in a large Ziploc bag. Mix together remaining ingredients (except for the peanut satay sauce and cilantro) and pour in bag. Marinate for one hour or overnight. Grill the chicken skewers (can also use a grill pan). Serve with peanut satay sauce. Sprinkle with cilantro, if necessary.

Champagne Bleeding Heart Cupcakes

Champagne Bleeding Heart Cupcakes

Take a cake mix, add a little champagne and you have a delicious cupcake that’s perfect for Galentine’s Day or Singles Awareness Day.

Ingredients:

  • 1 box white cake mix
  • 1 cup champagne
  • 1/3 cup butter softened
  • 3 egg whites
  • 1/2 cup butter, softened
  • 4 cups powdered sugar
  • 2-4 tablespoons champagne
  • Chocolate hearts
  • Raspberry jam

Directions:

Heat oven to 350 degrees. Mix together the ingredients for the cake by hand or in a mixer. Line muffin tin with pink cupcake wrappers and fill with batter. Cook 15 minutes or until cooked through. Let cool.

Use a small scoop or strawberry top remover to remove the center from the cupcake. Fill with raspberry jam. Mix together butter, powdered sugar and champagne until thick and creamy. Place in a piping bag and ice. Top with a small spoonful of jam and finish with a chocolate heart.
