These Sheet Pan Breakfast Nachos Are Our Latest Addiction


Sheet pan nachos are popping up everywhere, and I’m glad to see this trend take hold! A quick and simple party eat, a delicious dinner, a tasty midnight snack, sheet pan nachos are quick and versatile.

So versatile, in fact, that I figured I’d make them for breakfast!

Instead of chicken or carne, I’ve topped yellow and white corn chips with sausage (bacon would work, as well), taco-seasoned eggs, and lots of cheese. You can keep it simple, garnishing with green onions. Or go big, loading your breakfast nachos with all of the taco toppings: purple cabbage, guac, sour cream, cilantro, radishes — whatever you like best!

Sheet Pan Breakfast Nachos Recipe

Ingredients

• 1 Tablespoon butter or olive oil
• 6 eggs
• 1/2 packet Old El Paso taco seasoning
• 1 (11-ounce) bag corn chips
• 1 (9.6-ounce) bag cooked sausage or bacon
• 8 ounces shredded Mexican-style cheese
• 1 bunch green onions (or 1/2 cup purple onions), diced
• 3/4 cup salsa, pico de gallo, or diced tomatoes
• 3/4 cup guacamole or diced avocado
• 1/2 cup purple cabbage, shredded (optional)
• 1/4 cup sliced radishes
• 1/4 cup chopped cilantro

Directions

1. Heat oven to 400 degrees Fahrenheit.

2. Melt butter in a large saucepan over medium heat. Add eggs and taco seasoning to the pan, cooking until scrambled.

3. Line a large baking pan with parchment paper. Arrange a thin layer of corn chips, top with half of the eggs, sausage, cheese, and green onions. Top with a second layer of corn chips and the remaining eggs, sausage, cheese, and green onions.

4. Bake for 15-18 minutes, or just until the cheese begins to melt. Top with desired toppings (tomatoes, guac, cabbage, radishes, etc.) and garnish with cilantro. Enjoy!
