The first time I had red velvet cake I was too little to remember much else that happened that year. But boy, oh boy, do I remember that brilliant red cake all decked out in rich, cream cheese frosting. Just thinking about taking that first sweet, creamy bite has me itching to go track a slice down and devour it.
That day changed me. It’s like that slice of cake took on a whole new dimension of amazing and shined a bright light on all things wonderful in life. I swear there might have been a choir singing in the background while I ate, too. Hey, don’t question me! I was only 7 years old. ;)
Can you picture me licking every. last. crumb. off my plate and fork? Because that’s what I did, and that’s what you’ll do to these Red Velvet Pancakes.
Grill them up giant style or make mini silver dollar pancakes for the kiddos. Then drizzle this homemade cream cheese frosting all over the top, because we all know red velvet isn’t red velvet without cream cheese frosting!
