I don’t know what it is about rainbows, but every time I see one I get giddy. Like, goofy smile all up on my face giddy.
There’s just something about that ROY G BIV arc of color that tugs the corners of my smile all the way up and makes my eyes sparkle. Although, it may not be as strong a reaction as the guy who cried after he saw a double rainbow. (Remember that?! All the way!)
I did cry when I saw these rainbow cookies, though.
Call me a wuss, call me silly, I don’t care! I needed this sugary sweet punch of color in my life after a week of dreary downpours and lingering chills of winter.
Seriously, this combo of soft, chewy cookie dough and crunchy Fruity Pebbles — plus a sweet kick from white chocolate morsels — will boost your happiness meter to the moon. Just take a bite and savor it, that’s what happiness tastes like!
This rainbow cookie recipe is kept moist (#sorrynotsorry) and fluffy thanks to a package of vanilla pudding mix. Have you ever baked with pudding mix before? Trust me, it’ll change your world! I use it in cakes and cookies often, and these rainbow cookies are no exception.
