You Can *Really* Taste the Rainbow With This Peeps Hot Chocolate!

Every color of the rainbow, and topped with pretty Easter Peeps marshmallows, this fun drink is based on the popular “Unicorn Hot Chocolate” — a white chocolate drink, tinted pink and topped with marshmallows, rainbow sprinkles, and whipped cream. I thought the idea was so cute, it deserved an Easter-inspired makeover!

A perfect excuse to pick up all the rainbow-colored Peeps, a scoop or two of white hot chocolate mix kicks up the flavor a notch and gives it that added cocoa twist. Or you can make this fun drink into a vanilla steamer by leaving out the hot cocoa, your choice!

You might be surprised at the final flavor of this delicious drink. Though the ingredient list is short, the combination of pure maple syrup and vanilla combines with the milk to create a cotton candy-like flavor. Feel free to swap in almond milk or coconut-almond milk, if you’d prefer to go dairy-free.

And though whipped topping can always be a quick option, I topped my mugs with real whipped cream (whipped coconut cream would also be tasty!) and the end result was magical. So magical, I’m pretty sure I saw a unicorn or two, winking at me from over the rainbow.

Peeps Hot Chocolate Recipe

  • 3 cups milk
  • 1/3 cup pure maple syrup
  • 1/2 teaspoon vanilla extract or almond extract
  • 1-2 scoops white hot chocolate mix
  • 1 1/2 cups whipped cream, sweetened
  • 8 Peeps, any color*
  • 1 Tablespoon rainbow sprinkles or rainbow sprinkle confetti

1. Heat milk, maple syrup, vanilla extract, and white hot chocolate mix together until steaming.

2. Pour into four large mugs. Top with whipped cream, peeps and sprinkles. Enjoy!

Brooke’s note: I pulled the end Peeps from several packs, then stuck the marshmallow sides together to make a side-by-side combo that sat nicely atop a mug of this yummy cocoa.
