Have you discovered overnight oats yet? They’re little pots of uncooked, old-fashioned oats that soak and soften overnight, creating creamy jars of goodness that are ready to enjoy the moment you wake up. No cooking required!

Basic overnight oats recipes are typically vanilla or banana flavored. But I couldn’t let the season pass without making a pumpkin spice version. Because pumpkin spice.

If you’re a fan of all things pumpkin flavored, this quick breakfast is a total must-try. Ideal for busy weekdays, when so many of us don’t have time to make a proper breakfast, this recipe also makes a splendid holiday breakfast.

Just think! You could wake up on the morning of Thanksgiving and pull little mason jars of ready-to-eat oats right out of the refrigerator. Easy peasy! And so deliciously tasty. Especially when served with a variety of toppings so guests can build their own flavors. Lay out fresh berries, chopped fruits, chopped nuts, granola, and mini chocolate chips, then invite everyone to make their own pumpkin spice parfaits.

Making a batch of overnight oats is easy. Simply stir all the ingredients together in a mason jar, cover with a lid, and refrigerate. In the morning, you can serve them immediately, or microwave them until warm. I love topping mine with yogurt or whipped cream, then spooning into the custardy oats with orange juice on the side.

Ingredients

  • 2/3 cup old-fashioned oats
  • 2 Tablespoons chia seeds
  • 1/2 cup pumpkin puree
  • 2 teaspoons pumpkin pie spice
  • 1/4 cup maple syrup
  • 3/4 cup almond or coconut milk
  • 1/2 cup vanilla yogurt for topping
  • 1/2 cup fresh or frozen blueberries

Directions

  1. In a wide-mouthed mason jar, stir together oats, chia seeds, pumpkin, almond milk, maple syrup, and pumpkin pie spice.
  2. Cover and refrigerate overnight.
  3. In the morning, enjoy cold or microwave until warm.
  4. Top with yogurt and blueberries. Enjoy!
