Show Your Sweet Potatoes Some Love With Taco Stuffing


Even though Meatless Monday has the word “less” in it, your dinner can be more flavorful, more delicious, and more fun. All while going meatless. And costing less than your average dinner.

This easy baked sweet potato recipe is a family favorite. Even the picky kiddos love this dish, and everyone is too busy enjoying it to remember that it’s a meal without meat.

Taco-Style Baked Sweet Potato Recipe

Yield: 4 servings
Prep time: 12 minutes
Total time: 30 minutes

Ingredients

• 2 sweet potatoes
• 1 cup shredded sharp cheddar
• 1 cup black beans
• 3/4 cup tomatoes, corn, and green or purple onions
• 1/4 cup cilantro, chopped

Directions

1. Heat oven to 400 degrees Fahrenheit.

2. Pierce potatoes with a fork. Microwave for 7-9 minutes, or until tender.

3. Slice potatoes in half lengthwise. Scoop out centers. Place scooped out portion in a bowl.

4. Mix in cheese. Gently fold tomatoes, corn and/or onions. Scoop into the center of the hollowed-out skins.

5. Transfer to a parchment-lined baking sheet and bake for 15-20 minutes, or until cheese is melted and begins to bubble around edges.

6.  Garnish with cilantro. Enjoy!
