Let’s be straight. Going back to school can be a drag. After a whole summer of fun and freedom, your kid now has to wake up early, walk to the bus stop and hit the books. It’s not always easy being a kid, so we’ve created this fun treat to sneak into their school lunch.
These easy back to school no bake cocoa puff bars are a healthy, homemade snack that’s a perfect swap for processed granola bars. And they’re both gluten-free and sugar free!
Back to School No Bake Cocoa Puff Bars – An exclusive recipe for The Good Stuff!
Ingredients: Makes 9 bars
- ¾ cup almond butter
- ½ cup brown rice syrup
- ½ cup very dark chocolate chips + 4 tablespoons (melted)
- 2 1/2 -3 cups gluten-free cocoa rice puffs
- 2 tablespoons rainbow chip sprinkles
- 18 edible candy eyes
Directions: In a large skillet, heat almond butter and brown rice syrup together over medium heat. Once bubbling, quickly add the chocolate chips. Remove from heat and stir until combined.
Stir in the rice puffs. If the mixture is runny, add another ½ cup of rice puffs—just until the mixture is thick and holds together. Press into a lightly greased 9×9-inch baking dish.
Sprinkle immediately with rainbow chip sprinkles and press firmly to stick them to the top of the bars. Refrigerate until firm for about one hour.
Slice bars into 9 servings. Pipe a small amount of melted chocolate from the snipped corner of a plastic bag or icing bag on top of bars to affix candy eyes, and pipe a smile. Allow to cool before wrapping and serving.
