There is always plenty to eat at a holiday meal, so don’t go overboard with portion size. Serve parfaits in small espresso cups or better yet, vintage tea cups, which will add spring cheer to your table. We cut the cost of granola by 50 percent when we bought granola bars and chopped them in a food processor as opposed to buying loose granola.

Broccoli Cheese Potato Bake

Shredded Cheddar

Canned soup is the secret to making simple dishes that have a lot of flavor. Combine them with potatoes for a very affordable dish that fits perfectly with Easter Brunch. If you don’t like the look of casserole style dishes, consider baking individual portions in ramekins.

Spring Vegetable Bundles

Carrots – 2
Green Onions

Julienne carrots and bell peppers, bundle them with asparagus and tie together with a green onion. These perfectly packaged vegetables are a great way to ring in spring. And tying them off with the green onion is a lot cheaper than the traditional bacon wrapped asparagus bundle.

A 6lb-honeybaked ham can easily exceed a $40 budget on its own. For an alternative, go with a brown sugar glazed pork shoulder. We found a pork shoulder picnic roast on sale for $0.99 a pound.

M&M Cupcakes

Combine a cake mix and frosting pack and you can make 24 cupcakes for less than $3. It doesn’t get better than that! To personalize it, we splurged on some Easter M&M’s to give our cupcakes some Easter flair which (thanks to our coupon) still brought the total cost of the cupcakes to under $5.

Mimosas

Andre Brut Champagne
Orange Pineapple Juice

Shop the bargain bottles and you can get champagne for around $4. The trick to stretching the bottle and disguising the taste of inexpensive bubbly is turning it into a mimosa.
