Celebrate taco Tuesday with Cilantro Lime Chicken Tacos. Tacos are a quick dinner solution after a busy day. Buy packaged coleslaw for an easy mango slaw topping. The sweet coleslaw is the perfect pair for the spiced chicken tacos. These chicken tacos are made even easier with a big bag of Costco chicken breasts waiting in your freezer.
Cilantro Lime Chicken Tacos With Mango Slaw
4 boneless breasts chicken, thawed, cut into 1” pieces
1 tablespoon canola oil
1 red bell pepper, cored, seeded and diced
1 onion, sliced
1 1/2 teaspoons cumin
1 teaspoon chili powder
8 flour tortillas
½ cup mango, diced
2 cups prepackaged coleslaw mix
2 tablespoons fresh cilantro, chopped
Juice of 1 lime
1 teaspoon honey
2 tablespoons olive oil
In a small bowl mix together coleslaw & cilantro. Mix together lime, honey and olive oil and toss with the slaw mix. Refrigerate until ready to serve.
Heat 1 tablespoon canola oil in large skillet over medium high heat. Add chicken and brown on both sides. Add peppers, onions, cumin, and chili powder. Continue cooking until chicken is cooked through.
Fill tacos with chicken and pepper mixture, top with slaw and diced mangoes.
Create roll ups by placing mixture down the middle of the tortilla and top with slaw and mangoes. Tightly roll the tortilla around the filling.
Substitute pineapple for the mango and shrimp for the chicken.
