1. Italian Chicken Noodle Soup

This Italian chicken noodle soup infuses tomatoes, herbs, and garden veggies into the traditional recipe for an end result that’s full of zesty flavor. This Italian style take on the classic is sure to become a family favorite!

Ingredients

• 1 Tablespoon olive oil
• 1 onion, finely chopped
• 2 stalks of celery, sliced
• 2 carrots, peeled, quartered and sliced
• 1 14-ounce can of garlic & herb or Italian style tomatoes (do not drain)
• 4 cups of chicken broth — grab a coupon for Swanson chicken broth here!
• 4 cups of cooked shredded chicken — save on chicken with Tyson coupons!
• 1 cup of dry rotini pasta (or any short pasta) — get your pasta fix with Barilla coupons
• Salt and pepper to taste
• 2 zucchini, quartered and sliced
• 2 Tablespoons chopped parsley

Directions

1. Heat the olive oil in a large pot over medium heat. Add the onion, celery and carrots and season with salt and pepper to taste. Cook, stirring occasionally, until vegetables are just tender, 4-5 minutes.

2. Add the tomatoes and chicken broth to the pot, and bring to a simmer.

3. Stir in the chicken, pasta and zucchini and cook for 7-9 minutes more, until pasta is tender.

4. Add more salt and pepper as desired.

5. Sprinkle with chopped parsley and serve.
