No-Bake Blueberry Cake

A sweet, creamy whipped filling is stirred together with bright blueberries, then frozen between a streusel-like brown sugar and graham cracker crust.

So simple, you can make this no-bake blueberry cake in less than 10 minutes!

So delicious, you’ll want to dive right into it!

I love this recipe because it’s a crowd-pleasing winner and it’s easy to double or triple in size, so there’s enough to go around.

Prep time: 10 minutes
Total time: 3 hours 10 minutes

Ingredients

• 25 Honey Maid graham crackers (or 10 ounces granola)
• 12 Tablespoons butter, melted
• 1/2 cup brown sugar
• 8 ounces Philadelphia cream cheese
• 1/2 cup sugar or pure maple syrup
• 1 (8-ounce) container Cool Whip whipped topping
• 10 ounces blueberries
• Nonstick spray

Directions

1. In a blender or food processor, pulse graham crackers until a fine crumb. Transfer to a large bowl and add melted butter and brown sugar. Stir with a fork until well combined.

2. Press half of this crumb mixture into the bottom of an 8×8 pan, sprayed with nonstick spray.

3. In a stand mixer fitted with a whisk attachment, beat together cream cheese, sugar, and whipped topping until light and fluffy. Fold in blueberries.

4. Spread on top of crust. Sprinkle remaining graham cracker mixture on top and spread evenly across the blueberry filling.

5. Freeze for 3-4 hours or overnight before serving.

No-Bake Blueberry Cake: Steps 1 & 2

Start by blending 2 1/2 sleeves of graham crackers in a blender until fine and crumbly. Mix in the brown sugar and melted butter with a fork, stirring the whole mixture together until it’s well coated with the butter.

Now press half of the graham crackers into the bottom of an 8×8 cake pan, which has been greased with nonstick baking spray.

No-Bake Blueberry Cake: Steps 3-5

Time to start up your stand mixer! Beat together the cream cheese, sugar, and whipped topping until light and fluffy. Then fold in the blueberries, mixing just enough to stir them into the mix, but not so much that the filling becomes stained bright purple.

Spread your whipped mixture on top of the crust, then top with the rest of the crust and freeze for 3-4 hours (or overnight). That’s it! When you’re ready to serve, simply remove the cake from the freezer and slice into squares. Grab a fork and enjoy this easy, freezy No-Bake Blueberry Cake!

Can’t get enough of my irresistible No-Bake Blueberry Cake? Now you can make it — with a twist!

The cream cheese is swapped out of the original recipe with sweetened condensed milk added instead. After a few hours in the freezer, this cool and creamy cake is ready to be served!

Use any fresh berries — strawberries, blueberries, or raspberries are my favorite. Frozen berry mixes will also work.

Would you rather not freeze your cake? Swap any type of berries into my Blueberry Crunch Cake and you’ve got yourself two favorite cakes that taste great for every occasion.

    This was very good, however, since I do not like a lot of sugar..I used Greek Yogurt with a little bit of honey instead of Cool Whip. Love it!!!! Also, a little Healthier that way!

    Could I use homemade whipped cream instead of Cool Whip? Wondering if it would hold up. Don’t want the high fructose corn syrup store bought contains.

    The recipe calls for a 6-oz. container of cream cheese. Regular cream cheese is packaged in bricks, not containers. Does it mean whipped cream cheese, which does come in containers?

      However, if you’ve already made your Blueberry Crunch No-Bake Cake, the author said that the recipe is very forgiving and the missing 2 ounces of cream cheese shouldn’t cause any problems. :)
