Beer-Braised Chipotle Chicken Tacos Recipe

Make these Beer-Braised Chipotle Chicken Tacos a day ahead and warm them up at the party in disposable, portable food heaters. You could also cook them in a slow cooker for a super easy meal.

Serves 6

Ingredients

• 2 individual chipotle peppers in adobo sauce + 1 teaspoon adobo sauce
• 2 cloves garlic
• 1/2 large onion, thinly sliced
• 1 1/2 Tablespoons grape seed oil for cooking
• 2 teaspoon smoked paprika
• 1/2 teaspoon coriander
• 1/2 teaspoon cumin
• 1/2 cup freshly squeezed orange juice
• 3/4 cups reduced sodium chicken broth
• 3/4 cup Mexican beer
• 3/4 cup fresh cilantro, chopped
• 6 boneless skinless chicken thighs

Toppings

• Cilantro
• Sour cream
• Lime wedges
• Minced onion

Directions

1. Mince the chipotle peppers and garlic cloves.

2. Heat oil in large pot over medium heat. Add onions, sauté until softened. Add garlic and chipotle peppers, sauté for 1-2 minutes, stirring constantly to prevent burning.

3. Add the paprika, coriander, cumin, orange juice, chicken broth, beer, and cilantro and turn the heat to high to bring to a boil.

4. Add chicken breasts, cover and reduce heat to medium-low. Simmer for 15-20 minutes or until the chicken breasts are cooked through.

5. Remove chicken breasts from the pot, place on a cutting board and cool. Shred the chicken with two forks.

6. Keep the sauce left in the pan simmering over low heat until it reduces by about half. Add the shredded chicken back to the pot with the sauce and toss to combine. Top with additional fresh cilantro.

7. Spoon the chicken onto warm corn tortillas and serve with cilantro, sour cream, lime wedges, and minced onion.
