It can be hard to drag yourself out from under the warm covers to face these cold, dreary winter days. The floor is cold, the air is cold, and nothing beckons quite like a warm, fluffy bedspread and sheets.

Of course, you’ll have to get up at some point in the day, and what better way to reward yourself for braving these cold, dreary winter days than a piping hot dish of hearty comfort food.

I’ve rounded up some of the best comfort food recipes that are sure to motivate you to hop up and head to the kitchen to get dinner on the table. Check out my favorites below!

    1. King Ranch Chicken Casserole

    This King Ranch Casserole is always a favorite cold weather dish with my family. The Tex-Mex flavors help to warm you up and casseroles are always good for the soul.

    Yield: Serves 6
    Prep time: 10 minutes
    Cook time: 35 minutes
    Total time: 45 minutes

    Ingredients

    • 1 Tablespoon butter
    • 1 sweet onion, diced
    • 2 bell peppers (any color), diced
    • 2 10-ounce cans cream of chicken soup
    • 10-ounce can Rotel tomatoes with chiles
    • 1 cup water
    • 1 taco seasoning packet
    • 12 corn tortillas
    • 2 cups cooked, shredded chicken
    • 1 1/2 cups shredded cheddar cheese
    • Cilantro, for garnish

    Directions

    1. Preheat oven to 350 degrees.

    2. Add the butter to a medium skillet over medium heat and melt. Stir in the diced onion and peppers and cook until softened, about 5 minutes.

    3. Add onions and peppers to a medium bowl, along with the cream of chicken soup, Rotel tomatoes, water, and taco seasoning. Stir well to combine.

    4. Cut the tortillas into small squares.

    5. Spread 1/2 cup of the soup mixture into the bottom of a 9×13 baking dish. Top with 1/2 of the chicken, followed by 1/3 of the tortillas, and 1/3 of the cheese.  Top with 1/2 of the remaining soup mixture.

    6. Repeat the layers – the top layer will consist of just tortillas, soup, and cheese.

    7. Bake for 30 minutes or until hot and bubbly.

    8. Sprinkle chopped cilantro over the top and serve.
