These berry filled muffins are made with pancake mix in less than 15 minutes. Make them the night before and just warm them up on Valentine’s Day (or any day). No kid can resist the smell of these pancakes in the morning.
- 2 cups Bisquick
- 2/3 cup coconut milk or almond milk
- 2 eggs
- 1/3 cup maple syrup
- 1 cup mixed berries (frozen or fresh)
- 1/3 cup powdered sugar
Place berries in a colander over a bowl to drain excess liquid. Keep the liquid for the frosting. Preheat oven to 350 degrees.
Grease heart-shaped cake pan or muffin tins (whichever you have available). Mix together Bisquick, milk, eggs and maple syrup. Gently stir in berries and fill the pans or tins.
Bake for 15 to 20 minutes. Remove and serve warm with a drizzle of the berry frosting or cool and reheat prior to serving. Mix together the powdered sugar with enough berry juice to create a frosting. Drizzle across the hearts with a fork.
