Ingredients: 1 package mixed greens, 1 cup cooked quinoa, 1/3 cup strawberries, 1/3 cup blueberries, 1/3 cup raspberries, ½ cup toasted almonds and your favorite raspberry vinaigrette.
Directions: Place ingredients in a big bowl and toss with raspberry vinaigrette.
Red White and Blueberry Shortcakes (a Coupons.com exclusive)
Shortcakes are a classic 4th of July treat. Cut out star shortcakes and fill with fresh berries and whipped cream. If you’re short on time then use store bought pie dough.
Ingredients: 2 ½ cups flour, 1/3 cup sugar, 2 teaspoons baking powder, 1 teaspoon salt, ½ cup butter, 1 cup cream.
Directions: Place flour, sugar, baking powder, salt and butter in food processor or large bowl and mix until coarse. Add milk and mix until dough forms. Wrap in a disc and refrigerate for one hour. Roll out the dough and cut out large and small stars. Place on the baking sheet and brush with heavy cream. Sprinkle with sanding sugar. Bake for 20 to 25 minutes.
Assemble: Place large star on plate and top with whipped cream and berries. Add second star and sprinkle with powdered sugar.
