These days many of us are reducing or eliminating dairy from our diet. A great substitute is almond milk as it can be used as a base for smoothies or with cereal. But that’s just the start. You can easily add almond milk to your favorite recipes since it’s nutrient rich, high in protein and low in calories.
Mac and Cheese with Chicken and Broccoli – This one pot meal (because we hate doing dishes) will taste so good that your family will never know that you made it with almond milk.
Ingredients: 2 tbsp olive oil, 8 oz boneless, skinless chicken breast, 1 box Penne or Fusilli pasta, 4 cups unsweetened almond milk, 1 tbsp butter, 1/2 tsp mustard powder, 1-1/2 tsp salt, nutmeg, 1 tsp Worcestershire sauce, 1-1/2 cup grated cheese, 1 cup steamed broccoli, black pepper to taste
- Place olive oil in the bottom of a dutch oven or large saucepan. Sauté the chicken over medium-high heat until just cooked through. Remove onto a plate.
- Add almond milk (unsweetened), pasta (can use whole wheat or gluten free), mustard, nutmeg and salt.
- Slowly bring to a simmer, stirring the macaroni frequently. After it starts to boil, reduce to a low heat. Cook the pasta for 10 minutes.
- Add the chicken, broccoli and Worcestershire sauce to the pasta and stir so the macaroni cooks evenly.
- Stir in your favorite cheese until it melts and the pasta is coated. I used cheddar but you can mix cheddar with Gouda or Gruyere.
- If you like your mac and cheese to have a crunchy top layer just sprinkle on a 1/2 cup of Panko bread crumbs and pour a little olive oil on top. Place under broiler and brown.
