Ingredients: Makes 4 servings

  • 1?2 gallon Ice Cream (in a rectangular carton)
  • 1 cup milk chocolate chips
  • 1 1?2 tablespoons coconut oil
  • Optional: sprinkles or chopped peanuts

Special equipment: large popsicle sticks


At least two hours before serving, remove the cardboard packaging from your ice cream container. Slice two 1-inch thick slices of ice cream from the block. Cut these slices in half and press a Popsicle stick into the center of each of the four pieces. Wrap in plastic wrap and return to the freezer. This will get firm so it’s easier to dip.

Re-wrap the remaining ice cream in the cardboard box. Return to freezer and save for later use.

When ready to serve, melt chocolate chips and coconut oil in a microwave, just until melted and smooth. The mixture should be warm to the touch but not hot. Remove the ice cream bars from the freezer. Working quickly and hold each ice cream bar over the bowl with melted chocolate chips. Use a spoon to drizzle the melted chocolate mixture over the ice cream bars until completely covered. Quickly dip in sprinkles or chopped peanuts, if desired.

Serve immediately or wrap in plastic wrap and freeze until ready to enjoy!
