Some mornings it feels like you barely have time to feed your kids, much less prepare yourself for the day. It’s true being a parent is a hectic job, but does that really mean mornings have to be such a rush? Nope. Not at all.
It’s easy to beat the morning crunch and feel better about what you’re feeding your family by trying these five simple breakfasts that you can freeze now and enjoy later.
• Flour tortillas
• Scrambled eggs
• Shredded cheese
• Ham, bacon or sausage
• Tater tots or hash browns (optional)
Lay a tortilla flat and sprinkle with scrambled eggs, cheddar cheese, meat and potatoes. Fold the burritos and freeze. Allow burritos to thaw in the refrigerator overnight, then heat in the microwave for 50 to 55 seconds.

• 1/2 lb breakfast sausage
• 1/2 lb hamburger
• Diced bell pepper
• Salt and pepper to taste
Preheat oven to 375 degrees. Combine the breakfast sausage, hamburger, diced bell pepper and seasonings to taste. Form into 1-inch balls and place on a parchment-lined baking sheet. Bake for 25 to 30 minutes. Freeze balls in snack-size zipper bags. Microwave for 2 1/2 to 3 minutes and enjoy with maple syrup.

• 1 lb breakfast sausage
• 1 (8 oz) jar pizza sauce
• 1 package (12 oz) refrigerator crescent rolls
• 5 eggs, scrambled
• 1 c shredded cheddar cheese
• Mushrooms and diced peppers (optional)
Preheat oven to 375 degrees. Form each crescent roll into a flat disc. Spread pizza sauce over the disc, then sprinkle on cheese, eggs, sausage and toppings as desired. Bake for 10 to 12 minutes. Allow to cool before freezing. Thaw in the refrigerator overnight, then microwave for 50 to 55 seconds.
• I lb sliced ham or bacon
• 5 eggs, scrambled
• 1 c shredded jack cheese
• 1/2 c sliced mushrooms
• 1 package pre-made pie crust
Preheat oven to 375 degrees. In a large bowl, mix together ham or bacon, scrambled eggs, cheese, sliced mushrooms, and salt and pepper to taste. Divide crust into 10 equal balls. Roll each ball into a circle approximately 1/4 inch thick. Divide the filling evenly between the crusts and crimp closed. Bake for 18 to 20 minutes. Thaw before microwaving for 45 to 60 seconds.

• 1/2 c oatmeal
• 1/2 c cottage cheese
• 4 egg whites
• 1 tsp vanilla extract
Blend all the ingredients until well combined, then cook over medium heat on a griddle, flipping once. Freeze pancakes individually in plastic wrap. Frozen pancakes can be reheated in the toaster. Top with sliced fruit and enjoy.
